Fiddleheads
Tide Head is known as the "Fiddlehead Capital of New Brunswick".
Fiddleheads are the early growth of the Ostrich Fern which abounds
in the islands which dot the Restigouche River in the Tide Head
area. Picked, cleaned, boiled and salted, fiddlehead greens are
thick and succulent, an epicurean treat that is quickly becoming
known in gourmet restaurants and hotels throughout the United States
and Canada.
Sugar Camps
As springtime arrives, hundreds are drawn to the maple sugar camps
to watch the trees being tapped for their mouth-watering maple liquid.
This precious liquid is then boiled in huge vats to produce syrup,
toffee and sugar. You'll also have an opportunity to experience
the delicious syrup as it's poured onto the clean snow, freezing
instantly into chunks of sugar or toffee.

Many people are discovering that snowshoeing offers an easy and

Ice Fishing
In February, the surface of the river trades the moving reflection
of the sky on its waves, for the opaque waves of powdered snow created
by the north wind. Hundred of shelters grow on the frozen river.
Time for "smelt fishing" is back. Family and friends get
together around the hole in the ice, and story time begins.
